Stuffed Peppers 2 Bell Peppers
1/2 lb Ground Beef
1 jar Marinara Sauce
1/4 Onion, diced
2 Tablespoons Grated Parmesan Cheese
1 cup Instant White Rice
Salt
Pepper Take peppers and carefully slice off top 1/2", seed peppers and keep tops. In large bowl mix ground meat with salt, pepper, parmesan cheese and onion. Divide meat mixture in two and begin to stuff each half inside each pepper. When peppers are full replace their tops. Add 11/2 cups of marinara sauce to crock-pot. Place peppers in Pot and add more sauce if necessary to cover sides of pepper. Let Cook on Medium for 3-4 hours till Meat is cooked thoroughly and peppers are tender. (TIP: Always keep a meat thermometer close by when cooking in a crock-pot. Even if meat has turned in color it may not have reached the necessary temperature to kill off bacteria!) Cook rice as directed on box. Scoop rice onto plates and spoon some sauce over rice. Place a pepper on top of rice and sauce.

1 Can cream of mushroom or cream of chicken soup
2 Boneless Chicken Breasts
Instant White Rice
Broccoli (optional) Put Chicken Breasts in Crock-pot pour soup over chicken and cook on simmer all day. Cook rice according to directions on box. Throw Broccoli on top of rice, the steam will cook the broccoli and add a little extra nutrition to meal. Put rice on plate and pour chicken mixture over rice.
*Serves 2 Mom's Beef Stew 1 Can Tomato Sauce
1 Package Beef Cubes
2 Large Potatoes
1 Small Bag of pre-peeled Carrots
1 Garlic Clove, chopped
1/4 Onion, chopped
1 Teaspoon Salt
1 Tablespoon Pepper
1 Tablespoon Sugar
1/4 Cup Olive Oil
In Frying Pan over Medium Flame, heat Oil. Add garlic and onion. When you start to smell them add Beef cubes. Brown cubes on all sides. Meanwhile, Turn Crock Pot on Low and add can of Tomato sauce. Add Salt and Pepper and Sugar.( the sugar cuts down the acid of the tomato sauce.) When cubes are browned add oil, garlic, onions and cubes to Crock-pot. Stir well. Let cook for 2hrs. Peel and Cut Potatoes into small-medium pieces. Add potatoes and carrots to crock-pot. Let cook another 2 hrs. Beef should be melt in your mouth tender! (Note: You can always add potatoes and carrots when you add beef, they'll just be a little softer.) *Don't forget to check beef with your meat thermometer!
