Breakfast Recipes

Quick & Easy Breakfast Burritos
3 Eggs
1/4 Onion
1/4 Bell Pepper
4 Sausage Links or 2 patties
2 Whole Wheat Tortillas
Shredded Cheese
Salt & Pepper to taste
Salsa (optional)
* Substitute fresh broccoli for sausage for vegetarian option Beat 3 eggs in a bowl. Dice Bell Pepper & Onion add to egg mix.   Add salt & Pepper.   In heated pan, brown sausage links or patties, breaking it up as it cooks.   Pour mixture into lightly heated, non-stick pan.   Add ground up sausage to mix and scramble together.   Mix in shredded cheese.     Divide in two portions and put in center of warmed whole wheat tortilla.   Add desired amount of salsa then fold bottom, fold top, fold side and roll.
*Serves 2

Quickie Bagel Breakfast
1 Bagel
1 Egg
1 slice of Pork Roll
1 slice of Cheese Fry the egg in greased pan breaking open yoke while egg is cooking.   Toast Bagel and place fried egg on bottom half.   Fry up pork roll cutting a slice 1/2 the diameter from center to edge to keep it from curling under.   When browned, add a slice of cheese to pork roll.   When cheese has melted, place pork roll cheese side down on top of egg.   Place the other half of bagel on top and enjoy!  
Serves 1

Hearty French Toast
1 Small Loaf Italian Bread
3 Eggs
1 teaspoon Cinnamon
Maple Syrup
Butter Slice Italian bread in 1" thick Slices.   Beat eggs in bowl. Mix in cinnamon to egg batter.   Dip each slice in egg until fully coated.   Grease pan or skillet and warm over medium heat.   Place battered slices on skillet.   Cook until both sides are browned. Serve hot with butter and syrup.  
*Serves 2
*Substitute Cinnamon Raisin Bread or challah for variations.   Use leftover Italian loaf for sandwiches or at dinner.

Homemade Cinnamon-Apple Oatmeal
1 cup Whole Oats
1 cup Nonfat or Lowfat Milk
1 teaspoon Cinnamon
1/2 Apple
1Tablespoon Honey
1Tablespoon Butter In a small saucepan, mix the oats with the milk and cook over medium heat for 5 minutes, stirring occasionally.   Cut apple into small pieces.   Add apple, cinnamon, honey and butter to oats and blend well.   Cover with lid, turn off heat and allow to sit for 2 minutes.   Stir well and serve hot.
*Serves 2
*Substitute Soymilk for milk allergies.   Try fresh berries in place of apples for variation.
